#LockdownLunch: Cauliflower Fritters with Olia Hercules

For this week’s #LockdownLunch we are joined by Olia Hercules to share a traditional Ukrainian cauliflower fritters recipe from her new cookbook ‘Summer Kitchens’. Olia’s cooking is an ode to traditional Eastern European flavours with a modern twist, as she shares the many plates of Ukraine & Cyprus where she was raised. This is a delicious, light, battered vegetarian breakfast or lunch served with dill mayonnaise. They’re dangerously tasty so be prepared for your new summer favourite.
